The product is harvested “raw” in order to improve its strength when moved in its eventually long transportations. The fennel is processed exclusively in Savignano sul Rubicone, for a total of 100.000 quintals of crude product and around 50.000 quintals of ready to eat fennel.

The line of work has a system of automated and weight-based, calibration. We wash every fennel with ozonized water. Ozone enhanced water allows a safe and heathy decontamination from bacteria. This process allows to extend product’s shelf-life.
